I love to make this Sundays, sometimes a double batch.  Then I take the leftovers and individually package in frig for quick protein snacks or breakfast!  Switch up the protein source from ham to bacon or sausage or a combo of what you like!  My family also loves when I add diced potatoes or hash brown potatoes, this would make it a carb day only then.


6 c. shredded cheese (Monterey jack or whatever you like)

mushrooms, sliced

onion, chopped

1/4 c butter, melted

1 T chopped parsley

1 c. cubed cooked ham

7 eggs, beaten

1 3/4 c milk

1/2 c flour

1 T salt


Place half of the cheese in a buttered 13×9 baking dish.  Saute mushrooms and onions in 1/4 c butter until tender, spoon over cheese.  Sprinkle ham over dish next and top with remaining cheese.
Combine eggs, milk, flour, salt and parsley; beat well.  Pour egg mixture evenly over the mixture.
Bake at 350* for 45 minutes or until set.

Makes 10-12 servings
