My son eats these as fast as I can make them! As with my protein ball recipe I change these bars up every time I make them too. Just make adjustments till you get it the way you like them 🙂
1 c (or less) honey
1/2 c brown sugar (I don’t add this, these bars are sweet without it)
1/3 c coconut oil
1/4 tsp salt
1 c peanut butter (or crunchy)
1- 1 1/2 tsp vanilla
3-4 c rice crisp cereal (organic is best, or leave out and add more oats or less cereal and more oats)
2 2/3 c old fashioned oats
2/3 ground flax seed (I added small amounts at first, to introduce to family)
Ground nuts (I will use less oats but sometimes add a cup or so of ground almonds, walnuts whatever I have. Healthy option but kids are not always on board with this change! Fun to play around with recipe)
1/2 c mini chocolate chips, dried cranberries (optional)
Combine oats, cereal and flax seed (ground nuts if adding). Stir well
Place in saucepan on medium heat: sugar (if adding), honey, coconut oil, salt. Bring to boil stirring whole time. Make sure sugars are dissolved. Take pan off heat and add PB and vanilla. Stir until smooth. Pour over dry mixture, stir well.
Let sit 5 minutes.
Bar pan with parchment paper over it. I use pan with 1/2 inch side, depends how thick you want your bars
Pour mixture onto lined bar pan. Press so mixture is flat. Can add mini chocolate chips if desired to top.
Allow to cool, I put mine in frig or they disappear 🙂
Then I cut them into 2 inch by 5 inch bars. Wrap in plastic wrap or baggie and keep in refrigerator. Can also freeze if sending to school/work for lunch and will be perfect by noon to eat and still be cool.
